Okay peeps, before you say anything, I already know I’m not Mexican… and neither is my hubby. And I’m not claiming this is the most authentic recipe for pico de gallo in the world. NOPE! I am just sharing with you why this is the best recipe for us and why it’s so meaningful, it deserves a post.
Long ago, in a land far far away….. Mexico to be exact, my husband and I got engaged. In a town by the name of Mazatlán. We stayed there for about a week and enjoyed being out and about in the town, meeting local vendors and eating more “authentic” Mexican food that you won’t find in those high end all inclusive resorts (but hey, we still love the heck out of those, too 🙂 ).
Anyhoo, the hotel we stayed at was pretty amazing and the food was frickin’ awesome! Which leads to me to mention the never-ending bowls of pico de gallo the servers would bring us at the poolside, as long as we kept ordering those Coronas. It was the BEST.Pico.De.Gallo.EVER. And of course we never thought of asking what the heck they put in it!
So, naturally, ever since then we had been trying to replicate what we thought was the right recipe, and finally after years (literally)… we got it!
We were just missing one ingredient…. JUST ONE INGREDIENT and we were finally back at that poolside in Mazatlán once more.
So here we are sharing this little piece of gold with you….
So this is how we do it (and remember you can always add or reduce the amount of ingredients to your liking depending on how much you want to make and how strong you like the flavors). This makes a pretty good size bowl though so I would encourage you to try it with these measurements first and go from there.
- 3 medium tomatoes (we use the kind on the vine)
- 1/2 of a yellow onion (it seems like a small amount, but it goes a long way)
- cilantro (several sprigs)
- The juice of 1 lime
- 1 tsp of salt
- 1 tsp of cumin – YEP, that’s the ingredient right there!!!!!
- 1 fresh jalapeño (optional) – we don’t include this because of the kids, but if you like it spicy go right ahead
All you do is chop all the ingredients, add the seasonings, mix it all up and viola! You have some awesome-sauce right there…..
***You wanna make it even more interesting??? Cut up a ripe avocado and include that in the mix…. you’ll thank me.***
So that’s it folks! I hope you will go out and try this awesome recipe that not only tastes good, but is diet friendly too (ya know for those of you still on track with that resolution thing).
